Instructions:
Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan and set aside.
Prepare the Banana Bread Batter:
In a medium bowl, whisk together the flour, baking soda, and salt. In a separate large bowl, cream together the softened butter and sugar until light and fluffy. Beat in the eggs, one at a time, then add the vanilla extract and mashed bananas. Stir in the sour cream. Gradually mix in the dry ingredients until just combined.
Prepare the Cream Cheese Filling:
In another bowl, beat the softened cream cheese, sugar, egg, and vanilla extract until smooth and creamy.
Assemble the Bread:
Pour half of the banana bread batter into the prepared loaf pan. Gently spread the cream cheese mixture over the batter in an even layer. Then, top with the remaining banana bread batter, spreading it evenly to cover the cream cheese layer.
Bake the Banana Bread:
Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. If the top starts to brown too quickly, cover the loaf with aluminum foil for the last 15 minutes of baking.
Cool and Serve:
Let the bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Slice and serve once cooled.
